Please take into consideration I am very new to this.
I'm still lost on what should be a decent army for 500/1k casual battles. My model pool is:
    2x Sunblood (kitbashed)
    1x Astrolith Bearer
    1x Oldblood on Carno
    10x Saurus Warriors
    8x Saurus Knights
    1x Kroak/Slann Starmaster
    1x Eternity Warden
1x Skink Priest w/ Priestly Trappings

If any advice on what to buy next/How to play Seraphon, please leave your suggestions!

    Welcome to Lustria!

You seem to be missing some battleline units, but for 500 we can make something happen I think:

You could proxy your Priest as a Starpriest and play this:
The Starpriest provides magic support and buffs up things with his Serpent Staff. The Oldblood and the Knights charge in and smash into the biggest enemy unit.

    Allegiance: Seraphon

    Leaders
    Saurus Oldblood on Carnosaur (240)
    - General
    - Trait: Thickly Scaled Hide
    - Artefact: Coronal Shield
    Skink Starpriest (80)

    Battleline
    10 x Saurus Warriors (90)
    - Clubs
    5 x Saurus Knights (80)
    - Blades

    Total: 490 / 500
    Extra Command Points: 0
    Allies: 0 / 200
    Wounds: 36

    Welcome to Lustria Online!

@Aginor wrote you a great 500 point list from what you own. If you looking to expand your collection then check out the thread in my signature. There a few 1k list to build towards.

If you don't necesarly care about optimal lists pick a battalion from the battletome and just build towards that. At 500 points none of them are particularly weak. In general, building battalions are a great way to expand as they fit together both lore and gameplay wise.

Alternativly, pick a big dinosaur and build around that. It'l take half your points so you won't have to decide on much more :p

Carnosaurs. Carnosaurs are ALWAYS the answer, so you should go out and have fun with double carnosaur lists! :D
If your building around big dinosaurs you can’t really go wrong as all of our dinosaurs look pretty awesome and are definitely fun to play with

Currently running low on money, but I have around 60usd to spend on models, if I were to get more battleline what would you recommend? I could get 2 boxes of skinks/ a box of saurus. If I can muster up the money I could go for a box of saurus and a box of skinks, I do have the option to get another SC box as well. I play with friends, and my main opponents are Skaven and SCE
If you wouldn't mind leaving your thoughts, please do so. Thank you for your time!

(Edit 1:) Or I could get a box of saurus guard I'm kinda lost on what should be my main battleline and what would be effective.

(Edit 2:) There is also the possibility that I could get a SC box kitbash the warriors into Guard. or I can just buy a box of guard if need be. Because then I could have 2 - 5x guard units and 3 - 5x knight units and 1 - 10x saurus warrior unit, with an additional Carno, and kitbash the skink from the SC box sprue to be a starpriest.

It’s depends on a lot, would you prefer to do an eternal starhost, a sunclaw, or skink spam and some more stuff. So really how competitive will you be playing? They all have decent value but what you want to do is important.

If you want infantry that can grind down other battleline but won’t die in mass amounts and have some staying power then go for saurus warriors. They have their ups and downs but they have decent ability. Guard are also powerful, but there will be considerably fewer of them
Pros- saurus have access to formidable Melee heroes as well as carnosaurs. Has a good screening option in the knights

Cons- saurus are the ones who suffer most from outdated warscrolls and general neglect from GW, their command traits are worthless.

Skinks are currently our most competitive battleline, although they received a nerf in the new GHB. They are fast and good objective grabbers.
Pros- while saurus have a few dinosaurs, skinks have more. They also have the legendary skink starpriest which is a staple of seraphon, in general skinks have the most synergies to use.

Cons- skinks CANNOT hold their ground or deal damage and will have to pull back at conflict as well as the fact that their heroes are fragile.

Hope this brief overview has some help in making a decision

If you place casually I would aim for Saurus Guard, Skinks, or maybe two boxes of Ripperdactyls if you want more bite in your army.
