Though a bit vague in a question, imo I don't think you can say "this unit" or "that unit" is THE one to watch for in any Fantasy army. Most of the time, it has to do with combinations, hammer/anvils, and flanks while raining down arrows, rocks, or magic.
Perhaps if you have specific armies with more information we can help you better?

aah i see in 40k it seems different in the fact that some units are point fillers and then you have a couple things that will wreck you if you dont watch out for it. such as this accounts name sake kharn the betrayer, hes a very nasty chaos space marine general with 7 attacks on the charge at S6 always hits on 2s, no saves allowed for 165 points ill take him everygame. unfortunately on 1s to hit he strikes a comrade of your choice in his squad.

Right, he sounds like a nightmare! WFB doesn't really work in the same way. As a rule, the special characters are overpriced but there are still a few to watch out for, Teclis the High Elf, for example.

There is still a point-filler/elite fighter spectrum but that's usually just the difference between core troops and special troops. Each army will have a few vicious, elite troops that you have to watch out for, surrounded by a few weaker core units. There are far too many combinations to 'watch out for' but you can still prepare yourself for any eventuality by constructing a balanced list. You should have 'anvil' units who can take a charge and hold an enemy unit in place (saurus, large Skrox units, temple-guard etc) and 'hammer' units to deal a fatal blow or side-charge (Cold Ones, Kroxigor, etc) to rack up the CR points. Scouts and Skirmishers can hassle the opponent, take on war machines and divert the enemy by setting up screens, these are your skinks, chameleons and terradons. Try to have some magic (Slann, Priest), and throw in a few nasty monsters for good measure (Stegaonds, Salamanders, Razordons), and you're done.

Carnosaur is the only dodgy/situational choice, you probably need a few more Temple Guard if you want to run a list with the slann in a TG bunker. Steggies were great character mounts in the last edition but are probably better as standard unit choices now, the ancient is better than the standard even after points costs are counted. The increased accuracy of war machines also is an issue for steggies, especially when you only have one.

Carnosaur is a spectacular model but is overpriced compared to other armies monstous mounts, most of them fly and have a breath weapon for similar points. It can be fun, especially when you have Scarvets as general and standard bearer with the main line and a non-general old blood marauding on his giant dinosaur.

Slann in a TG bunker with lore of life is the most common template. Solo slanns with a variety of other lores can also be very strong, but miscasts can be very dangerous to the TG bunker so cupped hands is mandatory if you don't have lore of life on a bunkered slann (some people say cupped hands is mandatory on your first slann in any case!).
