Sorry if this is a stupid question but can a Stegadon carry more than 5 crew?

No, it cannot. No such thing as a stupid question, either. The only options for a stegadon are the standard crew (i.e. stegadon or ancient stegadon) or it can be taken as a mount (EOTG or skink chief-in this case you have the rider plus a crew of 4). The last option is Lord Mazamundi (mispelled). Mazamundi is so huge that there is no room for a crew.

You get 5 crew, for a normal stegadon or ancient.

You also get a skink chief and a skink priest that can both take a stegadon as a mount.
