Flock is looking good so far! Always a mess waiting to happen! ;)
I would go with 1 of each, they fill different roles, so this gives you new options and opens up new ways of thinking your build out.
The second one is a strong list, but I like the way your first list plays, gives you a lot of options and outs.
Yes, the ability stacks. It does not fall under a rule of 1 so the main rule faq stands that abilities stack unless otherwise stated.
Liquid green stuff wprks pretty well for vines, but unfortunately they would be more subtle than the ones above. This also works: [MEDIA]
That being said, the Stormcast are order units, you could always add a few of your own, or get a few cannons. Usually a pretty good deterrent.
This would be extremely useful for the knights, and they should survive of you're playing others straight out of a starter kit. I would still...
Ziggurat is going to be awesome, carve in some cracks and add some vines and embellishments like glyphs or something like that! Can't wait to see...

This was a great build up. Tension high with the mounting armies, and the slann seetihing with power and anger. This is going to be great.
Drop the sunblood, kroxigor and priest. Change one unit of chameleons for a unit of skinks. 1560.
I would go for the scar-vet for the rerolls.
Looks pretty cool, I will definitely check this out and spread the word.
Of your opponent is using a 1900 point list you guys should just up the game to 2k, that 400 points over is a massive difference.
I think flying in was meant to be hyperbole for the amusement of the reader. It only works for things like chameleon skinks, storm friends,...
it would last until your next combat phase. Otherwise the reroll to charge would be worthless.
