7th Ed. A few questions

First off

1. I was under the impression there was a Maximium amount of points you can get from kills in close Combat is this true? (for example a unit of knights charges skinks and kills 10 would they get 10 + anyother bonuses they might have or is there a max)

2. Shooting at models on hills or large targets does shooting at these allow the firing of all your ranks?
(for example a unit of 25 Arrer Boyz 5 by 5 shoots a unit on a hill do 5 fire 10 fire or all 25?)

3. are Bretonnian Pegasus Knights Skirmishers? and what is there save is it a 3+ because I see no barding listed.

1. No maximum you can get from kills, but there is a maximum for Overkill, which applies only to challenges. This is a common misconception, probably caused by the fact that the combat resolution chart has no entry for normal wounds caused, but it DOES have an entry for Overkill. BRB pg. 37 Overkill - bottom right of pg. 38

2. They fire in all ranks. Often times being on a hill is a disadvantage. BRB pg. 9

3. Pegasus Knights - Hvy armour, Shield, mounted - so yes, 3+ (guess barding is too heavy to fly with). They are listed as flying cavalry, so yes they operate as skirmishers. See page 69 of the BRB.
