TLDR: thier mages summon an "ethersea" which means they are essentially turning the battlefield into a semi-permeable barrier between thier ocean domain and wherever they are fighting.

Magic powers then. Liquid enough for them to swim on land in, but permeable enough for the plot to allow land troops to still fight them.

Correct. The eel riders are alsi mentioned as if they are darting in and out of "mist"

Which I assume means they may have an on the board, hit a unit, off the board mechanic.

Granted, it doesn't matter to me as I'll use them for something else, but still.

From the limited number of pictures I've seen of Deepkin, yes. The sky ships are kind of cool... in an AoS sort of way. All three are great looking armies though!
