Yeah the problem really is that we only really know them in their ruined state.

I don't remember where. However I do remember seeing an explanation for how they went and put a Greek statue under some form of microscope or scanning technology and went back looking for microscopic particles of paint which they then use digital effects to extrapolate across the entire statue.
