how much inch a year does he shrink? Or does it depend on how cold it is

It was a pretty big jump down from iteration 1 to iteration 2. As they are pretty small now, the decreases are smaller, but still quite noticeable.

The original one is about 3 3/8" from tail to snout, while this very latest one looks to be just over an inch.

 

And another one, this time cut out of Birdseye Maple...

How about a Christmas cow?

This one is made of Walnut, Maple, Holly and Canary Wood. All colours are from the actual wood species themselves, no stains or paints involved.
